BBQ Turkey Roll
This is a delicious and healthy alternative to the usual Christmas Turkey. Make it up the day before, put it in the BBQ and enjoy your guests’ company…..
Ingredients
3-4kg Turkey, boned (ask the butcher to do this) 300g skinless chicken breast minced with 100g low fat ham (ask butcher to do this!) 3 thin slices low fat ham 1 egg white 1/2 teaspoon cardamom 8 fresh asparagus spears Chicken seasoning Method
Mix the chicken breast mixture with the egg white and cardamom.
Lay the Turkey open with the skin underneath. Place the ham slices on top of the turkey, then spread the chicken mixture on top (best done with clean hands) then put the asparagus on top. Roll up the Turkey enclosing all the ingredients and secure with string and toothpicks. Rub the chicken seasoning all over the skin of the Turkey.
Turkey can be covered and put in the refrigerator until ready to cook.
Cook in a barbecue, normal fire, indirect with the lid on for 1 - 1½ hours. (Don’t peek!)
Slice and serve with salads or veg.
Serves 10
