A tasty and tangy recipe that is great for hot summer nights!
Ingredients
4 skinless chicken breast fillets
120g spinach, shredded finely
1 medium red onion, chopped finely
1 medium mango, chopped finely
1 tablespoon coarsely chopped fresh mint leaves
¼ cup flaked parmesan cheese
¼ cup sweet chilli sauce
Method
Cook chicken on heated barbeque or under a grill until browned both sides and cooked through.
Meanwhile, combine all other ingredients in a bowl and mix well.
Serve chicken topped with the mango salsa along with a green salad.
Serves 4
Variation: substitute fish fillets, lean steak or pork for the chicken in this recipe
