Mushroom, Chicken and Tarragon Frittata
A delicious low carb meal that everyone will love.
Ingredients
10 egg whites
2 large whole eggs
200g chicken breast, cut into cubes
1 teaspoon dried tarragon
200g thinly sliced mushrooms
2 medium tomatoes, cubed
1/3 cup low fat cheese
4 spring onions, chopped
Method
Place the eggs and theegg whites in a bowl and whisk together.
Heat a medium non‑stick pan over medium‑high heat. Sauté chicken until tender then add the mushrooms, tarragon, spring onions and tomatoes and cook for a further two minutes.
Pour in the egg mixture. Let the eggs set for about 30
seconds. Tip the pan and lightly move the eggs so that they almost set. Cover the pan handle with foil and place under a pre-heated grill and cook for a few more minutes until golden brown.
Serve with a green salad
