Spice Crusted Lamb Cutlets

Get the feeling of Spring with this delicious recipe.  Take the cover off the Barbeque and invite your friends over.  They’ll never know it’s healthy for them because they taste so good!

 


Ingredients

8-16 lamb cutlets, (400g) frenched (with no fat on the bone to make handles)

2 teaspoons ginger, grated

1 clove garlic, crushed

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon chilli powder (optional)

1 tablespoon of water

 

Method

Combine the ginger, garlic, cumin, coriander, chilli and water in a bowl.  Coat the

lamb cutlets in the spice mixture.  Allow to marinate for a minute or two to develop the flavours. (If you have time!)

Cook the cutlets under a heated grill for approximately 5 minutes each side or until they are cooked to your liking.

Serve with a tomato and cucumber salad or some steamed vegetables.

Serves 4
