Creamy Macadamia and Ricotta Penne |

This delicious pasta is so quick and easy; you won’t believe it’s good for you!
Ingredients 500g of wholemeal pasta 2 cups of fresh coriander leaves 40g unsalted macadamia or pistachio nuts 1 clove of garlic 1 tablespoon grated parmesan cheese 1 tablespoon of lemon juice ½ cup low fat ricotta cheese 3 tablespoons semi-dried tomatoes
Method Cook pasta in a large saucepan of boiling water according to packet directions. Drain.
Place all other ingredients in a blender and process until smooth. Stir mixture through hot pasta.
Serve with a fresh green salad.
Suitable for breakfast, morning snack, lunch or afternoon snack. Serves 4
