Citrus Chicken & Chickpea Salad
Very delicious and very light meal is excellent on Summer Days
You’ll need
4 skinless chicken breast fillets (400g) 1 tablespoon lemon rind, finely grated 1 tablespoon lime rind, finely grated 300g can chickpeas, drained and rinsed 1 medium red onion 2 medium tomatoes, chopped coarsely 1 tablespoon fresh coriander, chopped 1 medium avocado, chooped coarsely 1 tablespoon lemon juice
Method
Combine chickpeas, lemon rind and lime rind in medium bowl, cover, refrigerate. Combine chickpeas, onion, tomato, coriander, avocado and lemon juice in medium bowl and mix well. Cook chicken on heated BBQ or grill until cooked, Spoon chickpea salad into serving bowls and top with warm chicken
Substitute: chicken with pork, fish or firm tofu
