Serious Fitness is a personal training and fitness studio based in Coburg, Melbourne, with regular bootcamp classes held in Coburg, Bulleen and Carlton. Our services include, one-on-one personal training, group personal training and group exercise classes including, Bootcamp, Powercise (like Zumba), Lean Ladies and Knockout - a mixed martial arts based program to get your heart pumping. Our focus is on creating great base fitness, getting results, improving your nutrition, all while having some serious fun!

Peanut Pork Schnitzels

Ingredients

400g pork leg schnitzels (uncrumbed)

2 tablespoons peanut butter

2 tablespoons low-fat yoghurt

2 teaspoons lemon juice

1 clove garlic, crushed

2 teaspoons honey

1 teaspoon ground cumin

1 teaspoon ground coriander

 

Method

Combine peanut butter with yoghurt, lemon juice, garlic, honey, coriander and cumin in a small bowl and mix well.

 

Brush pork with peanut butter mixture and cook on a heated grill or barbeque until browned both sides and just tender.

 

Serve with stir-fried Asian vegetables or a fresh green salad.

 

Substitute pork with chicken, firm tofu or beef

 

Suitable for all meals
