Steak, Rocket & Olive Wraps
These delicious wraps are fantastic for a quick lunch or easy dinner. You’ll need
400gm sirloin steak, all fat removed 1 red capsicum, seeded and sliced I bunch of rocket, rough stems discarded 16 kalamata olives, stoned and halves 3 teaspoons lemon juice 8 pieces mountain bread or 4 corn tortillas
Method
Grill steak on a hot grill until cooked to your liking (approximately 4-5 minutes each side). Cover with foil and put aside. Slice the steak thinly after it has rested for a few minutes. Combine rocket, olives, steak and capsicum in a bowl. Add the lemon juice and olive oil and mix well. Lay two pieces of mountain bread on top of each other and place ¼ of the mixture along one side of the bread. Roll up and repeat procedure for the remaining serves.
