A light and tasty summer recipe perfect for the warmer weather. It’s high in protein and very low in carbohydrates…
Ingredients
400g skinless chicken breasts
Cajun seasoning
Assorted lettuce leaves (cos, iceberg etc)
Fresh vegies of your choice including carrot, cucumber, tomatoes, snow peas, beans, onion, sprouts etc.
1 mango or avocado (optional)
Dressing
1 tablespoon extra virgin olive oil
2 tablespoons lemon juice
1 teaspoon garlic (optional)
Method
Whisk dressing ingredients together in a bowl or place in a screw top jar & shake to combine.
Coat both sides of chicken breast with Cajun spices, grill until tender.
Arrange lettuce and vegies on four plates. Drizzle over some of the dressing. Slice the warm chicken and place on top of the salad.
Place sliced mango or avocado on top, if desired & serve immediately.
Serves 4
Substitute chicken with beef, pork, firm tofu, salmon, fish or prawns.
