Salmon and Green Bean Salad
This delicious, healthy and quick recipe will have you in eating faster than you can order a pizza. YUM! Ingredients
4 x 100g Fillets of Salmon 400g Green Beans, topped & tailed 1 tablespoon extra virgin olive 1 tablespoon lemon juice 1 red onion, finely sliced Half a fennel bulb, finely sliced
Method
Heat a grill or non-stick pan and grill the salmon fillets until cooked through. Keep warm.
Bring water to the boil in a medium saucepan & blanch the beans until they just change colour. Cool under cold water & drain.
Mix together the olive oil & the lemon juice in a small bowl. In a serving bowl, add the beans, fennel & red onion. Pour the olive oil & lemon over the top & mix gently. Divide green bean salad between 4 plates and top with the grilled salmon.
